做法:洗净宰(zǎi )好鲫鱼,洗净淮(huái )山和(hé )薏(yì )米。用清水把陈皮泡软,拍(pāi )裂(liè )一(yī )小块姜(jiāng ),热(rè )锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火煲(bāo )一(yī )个半(bàn )小时,下盐调味即可品尝(cháng )。
