做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖(mèn )。
