做(zuò )法:春笋切成片后(hòu )加(jiā )少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
