做法:春(chūn )笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的(de )时(shí )候加入盐,翻炒均匀稍(shāo )收(shōu )汁(zhī )时盖上锅盖焖。
